salad in a jar is a beautiful thing! you layer it with all your fave green healthy goodies and put the dressing on the bottom, then come lunchtime you tip it into a bowl and it’s fresh, crunchy & tasty! In other healthy food related news, I’m onto my last day of Whole30, which is super exciting because it means that (1) I actually stuck to the entire program (2) I learnt some great things about my relationship to food and the kinds of food I want to be eating and (3) I can’t wait to have a glass of bubbles tomorrow!!!!

this is a photo I took when we were holidaying in Fiji, but I’m wanderlusting over a tropical holiday and getting all excited about our planned trip to Hawaii next year. It may be a full year away til that trip, but you can never tire looking at tropical beaches & turquoise waters….

the ten days Jay & I spent at Tokoriki Island Resort in Fiji in 2010 was one of the best holidays we’ve had.

we left relaxed, tanned & romanticized with the most delicious memories.

Today was cold and rainy. Which started me daydreaming about returning to Tokoriki Island in Fiji.
I’m remembering crystal blue water, huge friendly smiles, the softest ocean breeze rustling the palms, waking to the sound of gentle waves lapping and gulls chatting, reading my book stretched out on a swinging hammock, playing long games of pool-side chess, chasing geckos & hand feeding fish, the smell of sun block and papaya, snorkeling with reef sharks, hermit crab racing, our private little villa amidst paradise, the sweetest juiciest pineapple, midday beers by the pool, sunsets of the pinkest hues, massages by strong hands, the most amazing Kokonda for dinner, cocktails in the bar listening to the band and leaving so completely relaxed we felt reborn by the sun and the sea.
