banana pancakes | paleo style

Remember when I wrote about becoming a cavewoman [this post]?  Well, it’s been three weeks living the paleo diet and I’m feeling fantastic. I’ve dropped a couple of kilograms as well!!!

I’m not a good baker on the best of days, so I’ve had a few kitchen fails with the paleo baking (burnt muffins, failed bread…) but these pancakes are awesome! I got the recipe from Ultimate Paleo Guide [here] but it’s not just for paleoists; they’re flour-free, gluten-free and tasty, so give them a try!

Paleo Banana Pancakes

INGREDIENTS

  • 3 bananas, mashed
  • 3 eggs, beaten
  • 1/4 cup almond butter (like peanut butter but made from almonds)
  • butter for frying
  • toppings of your choice*

*if you’re paleo, keep it in the family. I topped mine with goats yoghurt, maple syrup & raspberries (but caramelized banana would have been awesome).

METHOD

  • mix ingredients together, fry in batches
  • serve with toppings
  • feeds two people

ellenix lennox head | cafe review

Lennox Head is exactly what I imagined Byron Bay to be like; a sweet little beach-side town with surfy shops, cute homewares & trinket stores and funky little cafes situated along the beautiful Pacific ocean.

While Byron is much more developed; a buzzy but relaxed alternative-lifestyle hub for Northern NSW, Lennox Head is just as I imagined.

On our Summer holiday away with The Jacksons we discovered the sleepy little town of Lennox had some amazing cafes! We actually drove the 20 minutes south from Byron to eat at Ellenix Cafe twice! Here’s a sample of the brekkie offerings…

It’s always a challenge for me to snap a picture of E’s food before he smashes it! Huzzah! Don’t the blueberry pancakes look delicious!?!

He orders something different from the standard “big breakfast”. Turkish pide stuffed with spinach & cheese served with a side of avocado & bacon and topped with a fried egg.

Who are we to argue! Delicious textures with the chewy grilled haloumi and chilled smoked salmon and the peppery crunch of fresh rocket.

it’s easy being green

I recently wrote about my new breakfast routine of a green smoothie (and my fancypants new Vitamix). 

I am seriously obsessed with the green smoothie revolution; My skin looks great, my insides function like a well oiled machine and it’s a fast way to have brekkie! So I thought I’d share a few combinations if you get the urge to go green.

The simple rules are

  • use a Vitamix (if possible, I know they’re expensive) because it turns everything to the smoothest liquid which is the reason it goes down easy
  • the foundation is anything green & leafy. preferably kale but you can use cavolo nero, spinach, silverbeet or lettuce
  • used unwaxed fruit
  • cut off any citrus peel
I need to buy some flaxseed or chia seed to add into the mix!
