A couple of months ago we had lunch with Mandy & Nath at The Oaks in Neutral Bay. Mandy mentioned that they had made some sticky ribs earlier in the week, so I mentally captured the method to recreate at home that night. Of course I varied the recipe from what Mandy used, so here it is;
To taste, create a marinade of soy sauce, honey, BBQ sauce, sweet chilli sauce, maple syrup, a shot of Woodford bourbon and a pinch of salt & pepper.
Marinate the ribs for at least an hour in the fridge (overnight would be optimal).
Into the oven on 180°C for 40 minutes, basting with the left over marinade every 10-15 minutes. Turn it up to 220°C for 5 minutes at the end.
According to your preference, serve in whole racks or cut into finger-sized portions. Either way you’re going to end up to your elbows in sticky sauce!
I serve with handcut wedges or chips (depending on what potatoes I have available) sprinkled with veggie salt or my own mix of paprika, salt & pepper, and a homemade coleslaw.
